VALPADANA PROVOLONE PDO
The Valpadana Provolone is a PDO fat cheese made from whole-fat cow’s milk and composed by a filata and semi-hard pasta.
The most classic type is the cylindric one (salami shaped), usually quite big; the other more diffused shape is the one resembling to a elongated melon. More antique is the shape of a pear. The weight of the wheel go, for the cheese with short aging, from a few hectograms to 10 kgs; for the one who ages more, from a few kgs to more than 100.
