PIACENZA’S RING-SHAPED CAKE – IDEAL IF ACCOMPANIED BY PIACENZA’S VALLEYS WHITE WINE
It is a typical dessert of Piacenza ideal at the end of every meal, perfect if matched with a good sparkling white wine. In order to give a correct shape to the dessert were once used – and still ARE used in some houses where the traditions are hard to kill – pots’ covers made of copper or aluminium, at which centre they put a reversed shield.
Organise the flour mountain shaped, on its top create a crater inside which are put pieces of butter, sugar, egg yolks, a sprinkling of grated lemon’s peel, a pinch of salt, a packet of yeast and milk or wine (poured gradually). A soft and homogeneous mixture manually obtained allows to realise a roll of dough that is going to be united at its extremities in order to create a ring-shaped cake. It is possible, at this point, to paint the dough’s surface with a beaten egg and sprinkle it with sugar and minced almonds, or immediately proceed to the baking, putting cake in a buttered baking tray and letting it bake for about half an hour in the oven at moderated heat.
