It is obtained by grapes of the Bonarda’s variety of Piedmont or by Croatina for at least the 85% and by other grapes of comparable colour from recommended varieties or authorised in our Province; it has a maximum production of 13 tonnes per hectare and a yield of wine that cannot exceed the 70%, this wine is ruby red sometimes intense, has a characteristic and pleasant scent and its flavour can be dry, medium sweet or sweet but also slightly tannic, still or sparkling. Its minimum alcoholic content generally is 11,5% by volume.
It should be served at the ideal temperature of 18° C and matches soups; if it is “sweet”, it is particularly indicated with strawberries and pastries. It’s also produced a version of this wine as Spumante coloured bright ruby red with characteristic aroma, fruity and winy, its flavour is sweet, harmonic, soft and smooth. It should be served at 8° C and it is excellent with friable pastries and springy fruit. Its maximum alcoholic content is 11.5% by volume.
