It’s obtained by Pinot Noir, Barbara and Bonarda grapes, in purity or blended at about the 60% and by other red grapes of recommended varieties; the maximum production is of 13 tonnes per hectare and a wine yield not superior to the 70%. Novello wine has ruby red colour with its characteristic scent, winy and fruity. Its minimum alcoholic content is 11% by volume. It goes well with seasonal dishes, especially with boiled meats and light braised meats, savoury cheeses and baked potatoes. It has to be served at 16°-18° C.
