"VIN SANTO" OF VIGOLENO (HOLY WINE)
This is a PDO wine. The wine-making, compulsory ageing, bottling and bottle’s perfecting operations have to take place only inside the administrative area of Vernasca’s district. For this wine it is forbidden the use of sulphites and filtrations during the various phases of vinification. The ageing must be at least of 60 months of which 48 months inside wooden barrels from the 1st November of the year of grapes production. The ageing period inside the barrels must take place in barrels that have a capacity not superior to the 500 litres. This wine has to be distributed exclusively inside the bottle so-called “Rhine” bottle which capacity is of 0,375 – 0,500 – 0, 750 with a cork stopper.
